Castello Monaci

The cellar of Castello Monaci of Salice Talentino represents the heart of Salento's oenology. Situated in a zone which keeps intact its Mediterranean characteristics, the vineyards of Castello Monaci grow on ground of limestone, clay and silica, a few kilometers from the sea. The vine has been cultivated in this area for more than 2000 years, the work first of the Messapi then of the Greeks and then of the Romans. The cellar owes its name to the castle which, from the end of XIV century, protected the estate. This was called Castello Monaci after the Monaci Cistercians who lived in it. Today the estate covers 220 hectares of which 60 are vineyards but which will soon reach 100 to make even more of the results already achieved. And it is amongst the property's vineyards which surround the modern pressing, vinification and bottling cellar that the oenologists of Castello Monaci are able to work best. Their attention is concentrated on the production of high quality wines, produced in limited quantities. Amongst these stand out indigenous vine varieties such as Primitivo, Negroamaro and Malvasia Nera and international varieties such as Chardonnay and Cabernet Sauvignon which already give great satisfaction on this estate.
